Cold mint salad with mint Josep Mercader

Ingredients for 4 people:

  • 80 g of micro mesclum
  • 600 g of beans
  • 80 g of pork
  • 80 g of Iberian ham
  • 1 sprig of mint
  • Mustard Vinaigrette
  • Salt

Elaboration:

We boil the beans in plenty of water and salt along with 1/3 of the sprig of mint, we cool them and drain them.

We boil the pig's feet in a habitaul way, we debones them and cut them into thin julienne.

Cut the Iberian ham and 1/3 of the sprig of mint julienne. We put the rest of the mint leaves with the vinaigrette and crush it with the blender.

We mix the beans with the micro mesclum, the minced mint, the chopped ham, the chopped pork foot and the vinaigrette, we mix it all well and place it in the center of the dishes with the help of a mold. Around we put a little pork pie, ham, minced mint and vinaigrette.
